Commercial electric heaters run multiple elements on a staged contactor rather than one large element, which is what lets a single tank recover quickly without an impossible instantaneous draw. Recovery is a function of total kW and is the number to size from, alongside storage volume.
The temperature rating is the specification to check against the application. Commercial dishwashers require 180°F sanitizing rinse water, which is why 180°F-capable units exist as a distinct class — a heater topping out below that cannot serve the machine without a booster.
Anything delivering above 120°F to a fixture needs a thermostatic mixing valve downstream. Storing hot enough to control Legionella and delivering hot enough to scald are the same temperature; the mixing valve is what separates them.
Connections are 3/4" MIP and 1-1/2" NPT dielectric nipples — the dielectric fitting matters here, since the tank and the building piping are usually different metals.
