The pressure side is split by material under Pipe and Fittings, because copper, PEX, CPVC and PVC each need their own joining method and the fittings do not cross over. Shutoffs and fixture connections are under Stops & Risers, and everything that holds pipe to a building is under Pipe Hangers.
The two questions that decide most orders here are material and connection. Material is usually set by code and by what is already in the wall; connection is set by what you can do on site — sweat needs an open flame and a dry line, press needs a tool and the right jaw, push-fit needs neither and costs more per joint. Fixture and appliance work adds a third: the rough-in dimension has to match what is already framed.
